BULGARIA: TAKSITA, BANITSA & BOZA


Immer wieder witzig: TAKSITATA - Bulgarisch für DIE TAXIS (Mehrzahl mit Artikel).

Ever since the fall of communism, it´s gotten more and more difficult to find real banitsa (filo pastry filled with sheepsmilk cheese, similar to Turkish borek) in Bulgaria. But Daisy Bakery (Boulevard Christo Botev 36) in Vratsa (a town of 80,000 in northwest Bulgaria) still makes it fresh every morning.

If you want to go really local, try banitsa with boza (fermented millet). If you want to go sort of local, try it with ayran (lightly salted plain yogurt). Either way, it´s a perfect savory breakfast.
